This is a recipe that I have been making for more than a decade and have finally perfected. I have made it for my family, friends, and many of my clients over the years. It is a great way to use leftover pasta, which is usually so dry that it doesn’t yield much in the way of pasta. You can use any leftover pasta you have, but I usually make it with elbow macaroni.
You can also substitute with any other leftover pasta you have, such as elbow macaroni (aka macaroni elbow) or elbow macaroni and cheese.
I’m not really sure why I first made this recipe as a teenager. It was like a combination of my parents’ recipe to make spaghetti, which is basically the same as elbow macaroni, and my own recipe for macaroni elbow. But when I started making it more regularly, I was like, “This looks awesome!” and it was. It’s very satisfying for all those people who love pasta, and it’s also very healthy, with so many delicious ingredients.
I could just make macaroni and cheese, but I find it easier to use one of my old recipes instead. Then again, I would have to eat it all in one sitting, so I guess I could still make it. I always make it for myself so I have my own personal recipe for it. It’s just a lot easier to make, so I’ll be doing that for the most part.
I was just playing around with my own recipe for the last couple of weeks, so I thought it would be fun if I made it for my home. I am a little anxious to start it because I’m still a little scared of making it by myself. I’m not going to lie. It’s going to be a lot of work and a lot of cleanup, but I’m ready to get started.
For now, I have the recipe and an email with the general directions (where to find the ingredients, how to make it, etc.) and all the recipes (Ive used it for a few other recipes that I had already tried it for and are good too). I have the general recipe written on a sticky note next to the recipe on my refrigerator. Ive also got a recipe notebook that I made and put in the fridge, so I have all the recipes Ive ever made.
The recipe is for a simple, easy to prepare, Mexican cheese sauce with a little bit of a kick, and it is also a great way to use leftovers from other recipes. It is called “el totumo” and is a word I picked up from a friend of mine who is a chef in Mexico.
Totumo (pronounced [ta]too-muh) or totum (pronounced [ta]too-muh) is a type of sauce which can be used to thicken sauces and soups. Some of the traditional recipes call for the sauce to be made of a mix of olive oil and tomato juice. Another kind of sauce that uses totumo is called the tahona (pronounced [ta]to-huh).
El totumo is a way that I make use of some of the leftover ingredients in my meals. For instance, I usually make a ton of hummus, which is a dip I make with leftover chickpea flour. I’ll use some of the leftover hummus in the recipe for the hummus (see recipe below) and save the other ingredients to use in various future recipes.
